Meet Xuan: A Passport on a Plate

My kitchen is shaped by a life lived all over the map. I was born in Africa and raised with deep Vietnamese and French roots. Over the years, I’ve had the privilege of calling South America, Japan, Paris, London, and now New York my home.

Having lived, shopped, and eaten across so many distinct cultures, I don’t cook inside a box. To me, fusion isn’t a trendy buzzword—it’s just how food naturally evolves when you carry a world of flavors with you.

Turning Constraints into Creativity

I didn’t just fall in love with cooking through fancy dinner parties—my approach to food became deeply personal when I faced a series of health challenges.

When I was forced onto a strict, low-sodium diet, I faced a choice: accept bland meals, or figure out how to build explosive flavor using spices, herbs, acid, and global techniques instead of salt.

Over the years, my table grew to welcome everyone. When my son went vegan, I leaned into my deep love for vegetables, creating rich, satisfying plant-based meals. And because I love entertaining, my recipes naturally adapted to my friends’ health needs—whether that meant cooking gluten-free, dairy-free, rice-free, or low-FODMAP (no garlic or onion).

Living and cooking with constraints taught me the ultimate culinary secret: Restricted ingredients never have to mean restricted flavor.

The “Small Plates, Big Versatility” Philosophy

Here is the truth: I am very busy, and I get bored fast. I refuse to spend three hours making dinner, and I absolutely hate eating the exact same meal more than twice in a week.

To solve this, I cook the way I grew up eating: Asian family-style, centered around a table filled with small plates.

A small-plates meal creates an abundant, vibrant spread for a dinner party tonight or it can be deconstructed into 2 to 3 completely different dishes over the next few days.
